Ingredients:

1 tbsp edible bird’s nest (soaked & cleaned)

1 cup rice

6 cups water or chicken broth

1 tbsp ginger (minced)

2 tbsp soy sauce

1 spring onion (chopped)

Salt to taste

Instructions:
Cook rice in water/broth until thickened (30 mins). Add ginger, soy sauce, bird’s nest, and simmer 15 mins more. Season and garnish with chopped spring onion.

Ingredients:

1 tbsp edible bird’s nest (soaked & cleaned)

200g chicken breast or tofu (sliced)

1 red bell pepper (sliced)

1 carrot (julienned)

2 tbsp soy sauce

1 tbsp sesame oil

2 cloves garlic (minced)

1 tbsp oyster sauce

Spring onions (for garnish)

Instructions:
Sauté garlic in sesame oil. Add chicken or tofu and stir-fry until cooked. Add vegetables, sauces, and bird’s nest. Cook 3–4 mins more. Garnish with spring onions.

4. Bird’s Nest & Mushroom Risotto
Ingredients:

1 tbsp edible bird’s nest (soaked & cleaned)

1 cup Arborio rice

1 cup mixed mushrooms (sliced)

1 small onion (diced)

3 cups vegetable broth

½ cup white wine

1 tbsp butter

1 tbsp olive oil

Parmesan (for garnish)

Instructions:
Sauté onion in oil & butter. Add mushrooms, then rice. Toast rice, then add wine. Gradually add broth until rice is creamy (~20–25 mins). Stir in bird’s nest. Cook 5 more mins. Top with Parmesan.

Ingredients:

1 tbsp edible bird’s nest (soaked & cleaned)

200g mixed seafood (shrimp, fish, scallops)

2 cups vegetable broth

1 onion (diced)

2 cloves garlic (minced)

1 carrot (diced)

1 celery stalk (diced)

1 can diced tomatoes

Salt & pepper to taste

Fresh parsley (for garnish)

Instructions:
Sauté onion, garlic, carrot & celery. Add tomatoes and broth. Simmer, then add seafood. Cook until tender. Stir in bird’s nest, simmer 3 mins. Garnish with parsley. Serve hot.
